Teriyaki Chicken Skewers

Serves 4 - 6

Marinade Ingredients
1 tbsp soy sauce
2 garlic cloves, crushed to paste
1/2 tsp ground ginger or 1 tsp peeled, grated fresh ginger
60ml dry sherry (optional)
60ml Del Monte Pineapple juice

For Skewers
4 chicken breasts, cut into 2cm squares
16 mushrooms, cleaned and stems removed
1 small red onion cut into 2cm squares
1 green or sweet red pepper, seeded and cut into 2cm squares

Method
1) Mix marinade in a bowl.
2) Marinade the chicken overnight in the fridge.
3) Skewer the chicken, mushrooms, onions & peppers onto skewers.
4) Grill or BBQ for 5-10 minutes on each side, or until chicken is done. Baste regularly with marinade.

Serve straight from the BBQ, or perfect cold for a picnic.
