For 8-10 pork chops
Ingredients
15ml olive oil
1 small onion, chopped
1/2 red bell pepper
35g brown sugar
1 garlic clove
10g dry mustard
120ml cider vinegar
950ml Del Monte Pineapple juice
Method
1) Brown onions, and red peppers in olive oil. Add brown sugar, garlic, mustard, and cider vinegar. Cook for one minute on high or until bubbly. Add pineapple juice. Allow to cool completely.
2) Marinade meat of choice (perfect with pork chops) overnight or up to 24 hours.
3) Cook on BBQ until thoroughly cooked, basting frequently with the marinade.
