Serves 4
Ingredients
500ml double cream
90ml Del Monte Peach & Pineapple juice
1 lime, zest
50g icing sugar
50g ginger nut biscuits
Summer fruits to serve
Method
1) Pour the cream into a large mixing bowl and sift the icing sugar in.
2) Grate in the zest of the lime.
3) Whisk the cream until it just begins to reach stiff peaks.
4) Add the Del Monte Peach & Pineapple juice and mix until combined – maintaining peaks.
5) Crush 3/4 of the biscuits with your fingers and divide into the bottom of the serving glasses - Reserving 1/4 for the garnish.
6) Spoon the syllabub into the glasses and refrigerate until set.
7) Crumble the remaining biscuit on top and serve with fresh summer fruits of your choice.
