Serves 6-8
Ingredients
200ml water
200g sugar
700ml Del Monte Grapefruit juice
1 teaspoon chopped fresh mint
Method
1) Bring water and sugar just to a boil in a medium saucepan over high heat, stirring until sugar dissolves. Remove from heat. Leave to cool.
2) Mix the sugar syrup mix and grapefruit in a blender. Stir in chopped fresh mint. Cover and chill 2 hours.
3) Pour mixture into the freezer container of an ice-cream maker, and freeze according to manufacturer’s instructions.
4) Alternatively to make sorbet without an ice-cream machine. Place in a large container in the freezer, as the sorbet freezes, every 30 mins to an hour, stir with a fork to loosen the mixture up, do this until the mix is completely frozen and very grainy, this will leave you with a grapefruit granita.
Serve in chilled glasses.
