Grapefruit Cake

Serves 4-6

Ingredients
120g plain flour
80ml Del Monte Grapefruit juice
150g caster sugar
4 egg whites
1 1/2 tsp baking powder
1/4 tsp salt
2 tsp grated grapefruit zest
60ml oil
3 egg yolks
Cake decorations of your choice
Icing
2 tbsp Del Monte Grapefruit juice
1 1/2 tsp grapefruit zest
100g sifted icing sugar
1/2 tsp vanilla

Method
1) In a large mixing bowl stir together flour, caster sugar, baking powder, and salt.
2) Make a well in centre. Add in order: oil, egg yolks, grapefruit peel, and finally the grapefruit juice.
3) Beat until smooth with an electric mixer.
4) In a separate clean bowl with a clean whisk beat egg whites until very stiff peaks form.
5) Carefully fold the egg whites into the batter.
6) Pour mixture into a lined 23 x 13 x 7cm rectangle cake tin.
7) Bake in 175°C/350°F oven for 25 to 30 minutes until done. Then cool on a rack upside down, remove from tin once cooled.
8) For the icing combine the ingredients until it is a smooth and drizzly consistency. Pour evenly over the cake, allow to slightly set and decorate to serve.
