Ingredients
2 oranges
2 grapefruits
2 small (600g) fennel bulbs, trimmed, finely sliced
1 medium red onion, finely sliced
1 tablespoon flat leaf parsley leaves
Orange & Grapefruit Dessing
100ml olive oil
40ml Del Monte Orange juice
40ml Del Monte Grapefruit juice
1 tsp whole grain mustard
Salt & ground black pepper
Method
1) Finely grate the rind from 1 orange and reserve. Peel and segment oranges and grapefruits.
2) To make the orange dressing mix the reserved orange rind with the olive oil, orange juice, grapefruit juice, mustard, salt and pepper to taste. Shake well.
3) Toss the segments with the fennel and red onion in a bowl to combine. Place on a serving plate or in a serving bowl, sprinkle with the parsley and pour over the orange dressing.
Perfect with grilled fish or chicken.
