Ingredients
4 duck breasts
200ml Del Monte Orange juice with juicy bits
1 tsp ground cinnamon
1 tablespoon honey
200ml soy sauce
50g butter
Orange segments to serve
Method
1) Score the duck fat with a knife.
2) Mix the orange juice, cinnamon, honey and soy sauce in a large bowl. Marinade the duck breasts in this overnight, in the fridge.
3) Remove the duck from the marinade, pat dry. Pan-fry the duck fat-side down, for 10 minutes on a gentle heat until is in golden.
4) Drain off the excess fat and return the meat to the pan. Add half of the marinade, and allow to reduce for five to ten minutes.
5) Remove the meat and whisk in the butter to make a sauce.
6) Serve the duck with the orange segments and sauce on top. Perfect accompanied by green vegetables and sautéed potatoes.
