Caribbean Salsa Strip Steak

Serves 3-4

Ingredients
130g finely chopped fresh pineapple
100ml Del Monte Mango & Papaya fruit juice
30g chopped red pepper
1 small onion, finely chopped
Small can of sweetcorn
1 tbsp chopped fresh coriander
2 tsp minced jalapeno pepper
2 tbsp lemon juice
1/2 tsp salt
Black pepper
1 tbsp butter
1/2 kg beef strip steak (or sirloin)

Method
1) In medium bowl combine the pineapple, red pepper, kiwi, sweetcorn coriander, jalapeno, lemon juice, salt and pepper, Del Monte Mango & Papaya fruit juice and mix.
2) Cover and refrigerate until serving time.
3) In a large skillet, melt butter until sizzling and add steak. Season with salt and pepper.
4) Cook over medium heat, turning once, until cooked to your liking.
5) Alternatively cook as desired on the BBQ.
6) To serve, slice steak thinly across the grain and top with salsa.
